Good Lord, Good Word, Good Food!

Sausage & Cheese Breakfast Casserole

2 (7 oz.) cans green chilies, chopped

6 corn tortillas, cut into 1/2-inch strips

1 lb. sausage, cooked and drained

2 cups cheese, shredded

8 large eggs

1/2 cup milk

1/2 tsp. salt

1/2 tsp. garlic powder

1/2 tsp. onion powder

1/2 tsp. cumin

1/2 tsp. black pepper

2 large ripe tomatoes, thinly sliced

1/2 Tbsp. paprika

Sour cream



The day before serving, grease a 9 x 13-inch pan or baking dish. Layer half the tortillas, chilies, sausage, and cheese in the dish. Repeat these layers a second time. Mix eggs, milk, and seasonings and pour over casserole. Arrange tomatoes diagonally on top and sprinkle with paprika. Cover tightly and refrigerate overnight. The following day, bake at 350° for 45-55 minutes. Serve with sour cream and salsa.
